I must admit Interview with the vampire was an awesome ending. Some of mine:
Donnie darko - Just because the first time i saw it i was like... Wut.
In bruges - Brutal and funny.
Seven/Se7en - Just wow.
Some TV series ending have been rather intense too.
Being Human: Series 3 - I was almost in tears after the connection built up with the characters for that to happen
The Walking Dead: Season 2, Episode 7 - Although it isn't the end it was quite intense.
Sons of Anarchy: Season 3 Finale - Anybody who is into this will agree.

I agree with Keanu, inception's ending is mind boggling. Even though the entire movie was also, the end opened up the story to so many possibilities.
